I just love it when I concoct something out of the blue and it turns up delicious!
This is what's for dinner tonight. I am calling this Easy Chicken Spaghetti but it doesn't have any red sauce at all.
Last night I put into my crockpot a couple chicken breast and a few chicken legs. I added a packet of Chicken Seasoning in a bag. I did not however add the bag! :-)
I added about 1 - 1 1/2 cups of water.
I let it cook on low all night and all day.
I came home from work and wondered what I could do to this chicken or serve with it without heating up the house, since it's 100 degrees outside.
I boiled a 1/2 bag of spaghetti noodles. While the noodles were boiling, I removed the chicken from the crock pot and juices. I took out the bones.
Once the noodles were done, I drained them in a strainer. In the same pot that I boiled the noodles, I added 1 can of cream of chicken soup, and 1/4 bar of Velveeta cubed. I added the chicken pieces to this mixture and stirred until it was melted.
I then added the drained noodles. Wallah! It is so yummy. I did not add any other seasonings such as onion, salt, pepper, garlic etc. So this is pretty plain and simple. Of course you could season it up if you like.
It made a huge pot and I am sure it would freeze well too! I am going to serve it with some cooked carrots or green beans. Hmm, there's a thought I could add the cooked carrots to the mixture and it would be like a chicken pot pie spaghetti. Maybe next time!
